FRUIT TART CAKE CRACKED
This time I finally cracked it and to make it even better it’s OIL FREE! I have been experimenting with making layered vegan cakes and haven’t had much success because it either rises, then deflates or sinks and becomes as hard as a rock. I, of course, added a bit of a spin and decided to make a Fruit Tart Cake instead. If you find that it’s still too chunky you can strain it before brushing it onto your pastry. Place dough in a 9-inch tart pan covering the bottom and sides. Sometimes it helps to add a small amount of water (½ to 1 teaspoon per Tablespoon of jam) and then heating it. In honor of my boyfriend’s mom (because my mom is all the way back in Hawaii) I made a special dessert knowing she loved fruit tarts. Pulse in egg, sugar, flour, salt, and vanilla until it comes together to form a soft dough. With a delicious spread cooked up from the grill, I thought a light fruity dessert would be a great addition. I decided this year that I wanted to do an afternoon late lunch, early dinner to take advantage of the beautiful day for grilling. Mother’s Day has somehow become an unofficial national brunch day to celebrate all the amazing mothers in the world and I can’t seem to figure out how that all started.
